About 40 years ago my family lived in Bridgeport Connecticut. My late father had an elderly pal named Jimmy Fiorito. He was a nice guy and he was well off financially. My father placed one in the kitchen sink and the battle began. The eel was not happy as dad tried to kill it and get it ready for the fry pan. Now I was about 8 years old or so and the eels would not stay in the hole. I started to bop them with the shovel and throw dirt on them but they kept crawling out of the hole. I put them back in the basket and placed the basket in my red wagon. The end of our block was a good sized stream, we always got wet there so mom could have a reason to whip us. I brought all the eels to the stream and set them free and this is pre-"Born Free," the movie. I really don't know what my father finally said to his friend, but we never had eel at the house again.

BIG IRISH STEW
1-1/2 lb. Beef or Lamb trimmed and cut into 1"cubes
? cup olive oil
6 cloves garlic chopped fine
4 cups beef stock
1 cup Guinness Stout Beer
? cup red table wine (dry)
? cup crushed tomatoes
1 tbl spoon thyme
1 tbl spoon Worcestershire sauce
3 bay leaves
2 tbl butter
3 lb red potatoes peeled and cut in chunks
1 large onion chopped small
3 stalk celery chop fine

? bunch chopped parsley
Salt pepper
Heat a large pot and add olive oil. Add meat and brown for 5 min.; add garlic cook another 1 min. Add stock, wine, tomatoes thyme Worcestershire and bay leaves. Bring to a boil and reduce to med/low [url=http://www.moncleroutletosterblade.com]moncler[/url] heat cover and simmer 1 hour. In another pot melt butter and add potatoes onion celery and carrots. Simmer uncovered about 30 minutes. Discard bay leaves. Spoon off fat add salt pepper to taste parsley and serve. You may cook this stew in your crock pot in about 4 hours or after always browning the meat cook in a pressure cooker for about 35 minutes. Serve with Irish Soda Bread and a glass of Guinness.
